I am picturing your layout -- I think correctly. You can run gigabit over copper as well as fiber. But you will want to be sure that your 5e is really 5e -- I say that because a lot of it is not (at least channel performance wise). But I don't know how many servers you have, so finding the most economical method may require you to write back.
Basically, you can run fiber to your servers and attach to a fiber NIC in each (more expensive). You can test your 5e channels and make sure that they pass all the 5e performance parameters and connect them to a 10/100/1000 switch port and make sure that they have a gig card in them (much less expensive) or you can run fiber from your switch room to your server room where you have another switch that has 10/100/1000 ports and connect the servers to it. Alternatively you can look into some traceivers, but I am not a fan of them because it is another point of failure.
