Some of our printers have been converted to Ethernet (TCP/IP). Is it still possible to 'vary' them off/on-line and, if so, how?

Not from an "MVS" standpoint. However, whatever software you are using to control those printers (and there are many different software products to do so) probably has commands to enable, disable, or logically "vary" them off-line or on-line.
